I love my Cuban culture and most of what it comes with so much that any chance I get to share it with friends, colleagues and new readers and viewers, I hop on it. Surely, what fuels my passion for celebrating our tradiciones is our food. I always say that you can get to know a culture and its people quite intimately through their foodways. That idea spans across the world and applies to just about any culture. So then, how lucky am I that I got to share one of my favorite Cuban dishes ever — ropa vieja made in the pressure cooker (electric) — and specifically the recipe from my cookbook Modern Pressure Cooking, on the TODAY show. And to boot, or rather, slather that perfect buttercream icing on the cake, supermodel Tyson Beckford joined me in TODAY’s kitchen, led by co-host of TODAY’s Take, Sheinelle Jones.
And, oh joy, did we have fun; really because when Tyson and you season the flank steak a la “salt bae“, life is good!
Enjoy also the super yummy chipotle carnitas tacos (recipe also in my cookbook!) we made, which Dylan came back to join us for. And even tho, Tyson nor I eat pork, much merriment ensued as we declared that #TacoTuesday is a very real thing on Monday!
