Friends! Are we tired of being in the house yet? I’m on day 40 or something like that and I’m going a bit batty, no lie. The one great thing about being inside so much is ALL the cooking I’m doing. The quarantine cooking is a real thing now. I’m cooking way more than usual as I’m normally dining out for meetings, trysts, and whatnot. Like most of you, your eating out expenses are down while your grocery bill is way up! I get it. And like most of you, I’m getting really creative in the kitchen. At least that’s the intention. Last week I hosted a Facebook Live with Rumba Meats and made dinner, teaching all the good people how to make a version of my fave oxtails recipe. This time, I tweaked them to be super smokey and spicy by switching up the seasonings.
Since we are enjoying the gift of time, check out the video and make this crazy delicious meal for dinner. If you have a pressure cooker, it’s done in about 35 minutes. If cooking conventionally, say in a Dutch oven, you’ll be enjoying sucking the life out of those bones in about an hour/hour and 15 minutes (depends on how much you cook).
